All of our cheese is made by hand in our traditional dairy, matured for the time needed to develop the distinctive flavours and textures, and specially selected only when they are ready by our expert cheese graders.
BLACKSTONE VINTAGE CHEDDAR
Named after the old black stone doorstep of our original farmhouse dairy, Blackstone cheddar sits proudly as one of Joseph Heler’s signature products. We age our cheddar slowly and our cheese graders only release each batch when the rich, robust and slightly sweet flavour has developed over time. A truly classic vintage cheddar.

MATURE CHEDDAR
Typically matured for between 9-12 months, the cheese has a firm body with an open texture, delivering a rich, creamy flavour with sweet and savoury notes.
